Making fresh chips the traditional way really isn't as much work as you think. You are often busy enough in the kitchen, and then cutting and pre-cooking some potatoes is doable. In any case, you get a top dish in return that tastes delicious. Another advantage of making your own chips is that they contain much less oil than chips from the freezer. These are pre-fried in oil in a factory at a low temperature and sometimes also provided with an extra layer of food additives (e-numbers).

Pre-cooking is important

Cutting and pre-cooking fresh potatoes at 120 degrees is extremely important when you start making your fresh chips. Whether this is for the deep fat fryer, the air fryer or the oven. The idea is the same. Begin with cooking the chips at 120 degrees, then cool them down and bake them crispy at 180 degrees. This is how you make fresh chips. 1 kilo (baking) potatoes of the variety Russets, Yukon Gold or Maris Piper 1 tablespoon sunflower oil
Salt and spices to taste Water

Tip: try a potato with skin, or use sweet potatoes. Use herbs like garlic, chilli flakes, or fresh parsley.

You can easily vary with different types of potatoes and herbs.


This is how you make it

Follow the steps below, and you will have healthy and crunchy chips quickly and easily. Boiling water as mentioned in step 2 is better than pre-cooking in the air fryer. You can cook the core much better with water.

1 Peel the potatoes and cut them into long slices of about 0.5 to 1 centimetre. Cut these slices again into strips of 0.5 to 1 centimetre. The thickness depends on what you like, but try to keep all fries the same.

2 Boil the chips in plenty of water with some salt and 2 tablespoons of sugar, about 6 to 8 minutes, until they are almost done. Drain the Potatoes: Using a strainer, drain the water from the potato slices. Pat the potatoes dry with paper towels to remove any extra moisture.

3 Put the dry cooled chips in a bowl and add 1 tablespoon of sunflower oil or peanut oil.

4 Shake the bowl until all the cooled chips are coated with a thin layer of oil.

5 Place the chips in the air fryer and cook them at 180 degrees for 24 minutes. Take a break every 8 minutes, open and shake the basket. After 24 minutes the chips are ready.

6 Sprinkle the chips with some salt and herbs. Serve right away and enjoy.
